Stuffed Pork Chops
with Rhody Fresh Apple Cider-Caramelized Onion Cream Sauce

This delicious recipe includes a 3-step process for the stuffing, the pork chops and finally the cream sauce.

Ingredients: Stuffing
1 diced yellow onion
3 garlic clothes minced
Juice from 1/2 lemon
3/4 cup raisins
1 apple chopped
3 stalks chopped celery
1/2 cup brown sugar, packed
1/2 teaspoon dried thyme
1/2 teaspoon Bells stuffing seasoning or savory
3/4 cup chicken stock
4 tablespoons Rhody Fresh butter
1 tablespoon olive oil
1 teaspoon salt
1 tablespoon pepper
1/2 tablespoon red pepper flakes
5 pieces of day-old bread, cubed
3/4 cup Rhody Fresh ButterKase cheese, shredded
3/4 cup Rhody Fresh Gourmet Apple Cider

Directions to Prepare Stuffing
Heat large saucepan on medium heat
Add 2 tablespoons of Rhody Fresh butter and olive oil
Add onions
Add garlic, apples, celery, raisins, dried herbs and seasoning
Add brown sugar
De-glaze pan with apple cider and chicken stock
Add lemon juice
Saute until translucent
Saute until caramelized.
Add bread and Butterkase cheese
Cook for 10 minutes on the stove until bread has absorbed the liquid

Prepare Pork Chops
Double cut pork chops seasoned with salt, pepper, lemon juice, olive oil and brown sugar Preheat oven to 400 F
Cut a deep slit into the pork chops and make a pocket for the stuffing
Add 1/2 cup of cooked stuffing to each pork chop (make sure not to overstuff)
Heat pan to high and add a tablespoon of olive oil
Add pork chops in pan and sear them about 3 minutes on beach side, until caramelized
Put stuffed pork chops in oven and cook until meat reaches 145 F

Ingredients: Apple Cider Cream Sauce
1 yellow onion, julienned
1 tablespoon olive oil
2 garlic clothes minced
1/2 teaspoon whole peppercorns
1 teaspoon salt
1/2 cup half cup brown sugar, packed
1 cup apple cider
1/2 half cup chicken stock
1/2 teaspoon dried thyme
1/2 teaspoon horseradish mustard
1/2 teaspoon Worcestershire sauce
1 tablespoon flour
4 tablespoons butter
1-1/2 cups Rhody Fresh Heavy Cream

Directions to Prepare Apple Cider Cream Sauce
Heat pan to medium low
Add olive oil, butter, onions and brown sugar
Cook for 10 minutes until caramelized
Add garlic, whole peppercorns, salt, ground pepper
Saute for a minute
Add flour and another pinch of salt. Cook for about 30 seconds before adding cider
De-glaze pan with apple cider
Cook for another five minutes
Add chicken stock and Rhody Fresh Heavy Cream
Add a pinch of red pepper flakes
Whisk to create creamy sauce
Simmer for 7 to 10 minutes, whisking often

Plate pork chops and pour cream sauce to taste. Garnish with greens, dried cranberries and/or pomegranate.

 
Davies Bacon, Cheese, and Potato Chowder
 

Davies Bacon, Cheese, and Potato Chowder
Congratulations to Chef Peter Fangiullo and his students from Davies Career and Technical High School in Lincoln RI. Try this great recipe using Rhody fresh Butterkase Cheese

Ingredients
(Makes 25 8oz portions)
1 lb. bacon, julienned
6-8 oz butter
2 lb. yellow onions, small dice
10 oz flour
1 gal chix or veg stock, warm
10 lb. potatoes. Peel, and dice 3/8", and par-boiled or steamed
1 quart milk
16 oz heavy cream
3 lb. butterkase, grated
2 bunches chives, chopped for garnish

Directions
Place milk in 2-cup glass measuring cup. Microwave on 100 percent power (high) until hot (about 2 minutes 20 seconds). Place hot milk and sugar in a blender container. Cover with a vented lid and blend until frothy, about 1 minute. To serve, divide coffee among 4 cups. Top each with frothy milk. Sprinkle with cinnamon or grated chocolate. Makes 4 servings.

Rhody Fresh Cappuccino
Makes 2 servings, 8 ounces of milk per serving.

Ingredients
2 cups strong, freshly brewed coffee
1 tablespoon sugar
2 cups fat free or lowfat Rhody fresh milk
Cinnamon or grated chocolate, optional

Directions
Place milk in 2-cup glass measuring cup. Microwave on 100 percent power (high) until hot (about 2 minutes 20 seconds). Place hot milk and sugar in a blender container. Cover with a vented lid and blend until frothy, about 1 minute. To serve, divide coffee among 4 cups. Top each with frothy milk. Sprinkle with cinnamon or grated chocolate. Makes 4 servings.

Fruit Smoothie
 

Rhody Fresh Orange Smoothie
Makes 4 servings, 4 ounces of milk per serving.

Ingredients
2 cups Rhody Fresh fat free or lowfat milk
1 6 ounce can frozen orange juice concentrate
1/2 cup sifted powdered sugar
1 teaspoon vanilla extract
4 to 6 ice cubes

Directions
In a blender combine milk, orange juice concentrate, powered sugar and vanilla. Cover and blend until smooth. With the blender running, add ice cubes one at a time, through open lid; blend until smooth and frothy. Pour into tall glasses; serve immediately. Garnish with your favorite fruit slices. Yields 1 quart. This shake can also be poured into freezer-pop containers for a dreamsicle snack.
